TRIPLE LAYER RAW BERRY CHEESECAKE

Indulge in this raw cheesecake from Panaceas Pantry. Raw, vegan & three delicious layers.

Base
1/4 cup rolled oats, ground into a flour
1/3 cup almonds
1/3 cup saltanas
Pinch vanilla bean powder
1/2 tbsp coconut oil, melted

1. Add oat flour, almonds and saltanas to a food processor. Pulse until small crumbs form. Add remaining ingredients and process until uniform (the mix should be a sticky ball- add more oil if necessary). Press into desired cake tin (we used 15cm square)

Blueberry layer
1/2 cup cashews, soaked 4 hours then drained
1/2 cup blueberries
3 tbsp rice malt syrup
1/2 tsp vanilla extract
1/4 cup coconut yoghurt
2-3 drops lemon essential oil (optional)
2 tbsp cacao butter, melted (and cooled for 5 mins)

1. Add all ingredients except cacao butter to a high-speed blender. Blend until very smooth, then add cacao butter and blend again. Pour onto base and set in freezer.

Pink layer
1/2 cup cashews, soaked 4 hours then drained
1/2 cup raspberries
3 tbsp rice malt syrup
1/2 tsp vanilla extract
2-3 drops lemon essential oil (optional)
1/4 cup coconut yoghurt
2 tbsp cacao butter, melted (and cooled for 5 mins)

1. Add all ingredients except cacao butter to a high-speed blender. Blend until very smooth, then add cacao butter and blend again. Pour onto blueberry layer and set in freezer.

White chocolate layer
1 cup cashews, soaked 4 hours then drained
1/3 cup tbsp rice malt syrup
1 1/2 tsp vanilla extract
3-4 drops lemon essential oil (optional)
1/2 cup coconut milk
1-4 cup plus 1 tbsp cacao butter, melted (and cooled for 5 mins)

1. Add all ingredients except cacao butter to a high-speed blender. Blend until very smooth, then add cacao butter and blend again. Pour onto raspberry and set in freezer.

Allow whole cake to freeze for at least 6 hours. To serve, remove from cake tIn, and cut with a very hot knife. ** to melt cacao butter: grate, then place in a heat proof bowl over just simmering water.
