Motel Mexicola’s Corn Esquites

Whether you’re after a lazy afternoon cocktail or to kick off a big summers night, Motel Mexicola is the place. Located in Seminyak, Bali, it has a vibrant personality of its own. 4 corn cobs, husks removed and washed

4 tablespoons sour cream

40 gm shredded mozzarella

40gm mayonnaise

15gm chipotle puree




Pre heat the chargrill or BBQ. Boil the corn whole in salted water for 8 minutes. Strain, reserving 200ml of the liquid. Chargrill the corn until the kernels caramelize and start to make a popping sound. Strip the kernels from the cob and reheat in the reserved stock. Spoon into serving dishes/ bowls and top with the sour cream, cheese and chilli mayonnaise.
